Justin Winery’s New Tasting Room in Paso Robles, CA

Just a 30 minute breathtaking drive from the quaint town of Paso Robles into the rolling hills of the Santa Lucia Mountains, you’ll quietly stumble upon the Justin Winery Estates full of Cabernet Sauvignon, Merlot and Cabernet Franc vines. But what hides beyond the grape leaves is something short of breathtaking.

On July 26th, Justin Winery will open it’s doors to the public while revealing a brand new tasting and dining room to boot.

“After two years of careful planning and thoughtful design, we are thrilled to unveil the new Tasting Room, Restaurant and JUST Inn Suites at the winery,” said David Bowman, Vice President of Marketing. “We took a ‘guest-centric’ approach to this ambitious redesign. The goal was to put the focus on the stunning estate vineyard views and our award-winning wines, surrounding both with a suite of uncommonly high quality food, hospitality and wine education. Our JUSTIN Wine Society family members as well as new guests to JUSTIN will love it.” 

When you first approach the winery, you are welcomed into a magnificent sun-soaked room where guests can mingle casually or enjoy a seated tasting with friends. Wine tasting is truly about the experience of relaxation and enjoyment, so why not approach it with elegant refinery and utter decadence?

What you’ll find with the new relaunch is room for additional seating either inside or outside, as well as an option to enjoy a wine pairing with food prepared by Executive Chef Will Torres. The menu features local and artisanal ingredients from neighboring farmers markets, as well as a la carte lunch options, three, five and eight course dinners or Sunday Brunch. Dinner or group reservations are recommended, but walk-ins are also welcome. Some menu must-haves include include:

  • Steamed Halibut Panisse, Spring Onion, Caper Berry, Black Olive, Romesco, Olive Oil Emulsion (featured below)
  • 48 Hour Braised Natural Short Rib Soubise, Turnip, Cody Farms Peach, Kimchi Consommé, Watercress
  • Ricotta Tart Poached Rhubarb, Strawberry Consommé, Tahitian Vanilla Ice Cream

Wine tastings of the latest 5 current releases are available at an affordable $10/person. For an additional $15, guests can enjoy local and artisanal meats, olives, nuts and fruits.

For those who are Wine Society Members, you’re in for a treat! Tastings and complimentary tours are free to members and up to 4 guests.

Other upgrades include the JUST Inn Suites (pun intended) featuring three private suites named Isosceles, Justification and Savant. Each room boasts new walnut furniture, designer amenities such as a Tempur-Pedic® mattress and luxurious linens and plush down pillows.
